Often referred to as the “champagne of milk,” milk kefir is a tangy, effervescent, and probiotic-rich fermented beverage that has been used for centuries to support digestion and immunity. While it may look like drinkable yogurt, it is actually a far more powerful probiotic source, often containing significantly more strains of beneficial bacteria and yeast. The best part? It is incredibly easy to make at home and, once established, your starter will essentially “make itself” indefinitely.
To start your fermentation journey, you will need a few basic, non-reactive tools and ingredients:
Milk Kefir Grains: These are not actual grains like wheat or rice, but rather gelatinous colonies of bacteria and yeast that look like small cauliflower florets.
Milk: Any mammal milk containing lactose will work, including cow, goat, or sheep milk. You can use raw, pasteurized, or even ultra-pasteurized milk.
Glass Jar: A quart-sized (1-liter) glass jar is ideal for visibility and cleanliness.
Non-Reactive Strainer: Use a nylon or stainless steel fine-mesh strainer. Avoid aluminum, as the acid in the kefir can react with it.
Breathable Cover: A coffee filter, cloth, or even a loose-fitting lid will allow for gas exchange.
If you are starting with new or dehydrated grains, follow the specific activation instructions provided by your supplier to revive them. Once they are active, follow these steps:
Add Grains to Jar: Place approximately one tablespoon (20g) of grains into your clean glass jar.
Add Milk: Pour about 2 to 4 cups (500ml to 1L) of milk over the grains. Leave about two inches of headspace at the top to allow the grains room to expand.
Cover and Sit: Secure your breathable cover with a rubber band or place a lid on loosely. Let the jar sit on the counter in a warm spot (ideally 68°F to 85°F) out of direct sunlight.
Ferment: Allow the mixture to ferment for 12 to 24 hours. The warmer your kitchen, the faster it will ferment.
You will know your kefir is ready when it has thickened to the consistency of drinkable yogurt and smells pleasantly tangy or slightly yeasty. You may also notice small pockets of clear liquid (whey) or air bubbles forming at the bottom of the jar. If the whey has completely separated into a thick white layer on top and a clear liquid on the bottom, the kefir is over-fermented, but still safe to consume.
Once fermented, you must separate your "workforce" (the grains) from the finished liquid:
Strain: Pour the contents of the jar through your strainer into a bowl or clean jar.
Separate Grains: Use a clean spatula to gently move the curds through the mesh until only the rubbery grains remain.
Start a New Batch: Do not rinse the grains. Simply place them back into a clean jar and add fresh milk to start the process again.
Store the Liquid: Place the finished kefir in the refrigerator to chill. It can be enjoyed immediately or used in smoothies.
If you want a thicker texture and more complex flavor, you can perform a second fermentation. After straining out the grains, leave the finished liquid in a sealed jar at room temperature for another 12 to 24 hours. This will significantly increase the probiotics and result in a creamier, more carbonated drink.
Never Rinse with Tap Water: Chlorine in tap water can damage or kill the delicate grains. The grains produce a protective coating called kefiran, which you should avoid washing away.
Grains Grow: Healthy grains will double in size every 1 to 2 weeks. If you have too many, you can eat them, share them with friends, or even feed them to pets.
Taking a Break: If you need to stop making kefir for a few days, store the grains in fresh milk in the refrigerator to slow their metabolism.
Troubleshooting Scents: A healthy batch should smell sour or like fresh yeast. If the jar ever smells rotten or develops fuzzy, colorful mold (pink, black, or blue), discard the entire batch and the grains and start over.
